Wine:
PORTAFALSA white wine
Linguine with broad beans, bacon and tomatoes
Ingredients for 4 persons
- 400 gr of linguine (ribbon noodles)
- onion
- 300 gr of bacon
- 1 kg of broad beans
- 15 small tomatoes
- Extra virgin olive oil
- Salt
- Some small mint leaves
- Ricotta cheese or fresh pecorino cheese
Preparation
Heat 2 spoons of extra virgin olive oil with minced onion in a big wide pot.
When the onion browns, add bacon and leave to cook for some minutes on a medium heat with the lid on. Then, add tomatoes cut into small pieces (without skin and seeds), the beans (without the pods) and the minced mint leaves and cook approximately 5 minutes.
Meanwhile, bring salted water to the boil, add linguine and cook them less than stated on the package. Drain the pasta and put it in the saucepan with the sauce.
Cook for further 2-3 minutes on a medium heat and serve hot in a big clay bowl with ricotta cheese or fresh pecorino cheese.
